   The Texas melt is sliced brisket topped with grilled onions, peppers, mushrooms, and provolone cheese on a bun. Campfire taters are smoked and grilled red potatoes, tossed with bacon, peppers, and cheese. At Haywood Smokehouse in Waynesville, NC, which is “The place to meat.”

   Shrimp quesadilla, poblano pepper, chicken tostada, and two crispy taquitos at Guyabitos Mexican Restaurant in Maggie Valley, NC. The shrimp quesadilla was something new and very good.

Roasted Pecans

I’ve been making a batch of these almost every week. They are sooo good!

Mix:

  • 2 cups of pecans
  • 1-2 Tablespoons of butter (melt in the microwave)
  • 1 Tablespoon of salt

Directions:

  • Preheat oven to 350°.
  • Spread pecan mix in a single layer on a baking pan.
  • Bake for 8-10 minutes.
  • Let cool & enjoy!
