A little chorizo a day early for Cinco de Mayo but I try not to spend much time cooking during the week. Plenty of sausage left for tomorrow.

This is the first time I’ve ever noticed a face. The lights really bring it out. I’m going to look at it all the time now.
I was inspired by Rachael Ray early this morning on the Food Network.
So I made her Green Harissa Chicken Thighs with a couple of adjustments. I used coconut oil instead of olive oil, minced garlic from a jar instead of chopping some, dredged my chicken in almond meal, and made cauliflower “rice” instead of the rice pilaf. Served with avocado to cool off the taste buds. 🙂

Turned out really good, other than probably using too much onion. The harissa has a great flavor I’ve never tasted before and with 4 jalapeños it has a nice kick.
The bacon is ground up in the chicken.

In 2010 I found the Slimmy and I’ve been a minimalist wallet fan ever since. I even bought a 2nd one last year. I’ve never been one to settle, so when I saw the Evan Wallet by Ainste, I had to try one.

It’ll be interesting to see if it’s a pain in the ass to deal with the rubber band. The Evan came with an extra rubber band, so I hope it’s not common for it to break. I do think I’ll like how secure everything is. I don’t have enough fingers and toes to count the times all of my cards fell out of the Slimmy, but luckily I’ve never lost anything (that I know of).
